The OXO Mandoline Slicer is head and shoulders above many of the slicers we have tried and is the slicer of choice for the Test Kitchen due to its versatility and ease of use. While it is priced near the top of the range, it is probably the last Mandoline you will ever need to buy.
I have had many different slicers over the years and yes, I have the scars to prove it, these things are super sharp and will take a decent piece of your finger in the blink of an eye. I cannot understate how careful you need to be around these things. They are so sharp that you can now buy protective gloves to use when working with them, just in case.
Having said that, they are one of the best tools you can buy for the kitchen bench.
Pricing ranges from around $12 for the plastic versions to upwards of $100 for stainless steel, with rotational blades and variable settings for thickness.
Personally, I love the stainless steel OXO Mandoline because I am pretty rough on it, especially with hard veggies but I can also dial it back for some fancy thin slicing when required and just dump the pieces in the dishwasher then into the utility drawer and it stands up to the punishment time and again.
The only improvement I could make is with the food holder. The base of the food holder is flat and would benefit from having a small arc which would increase the contact area for rounded foods like potatoes and carrots.
There are two separate slicing inserts each with 2 different blades (Straight cut, Serrated, Wavy, and Crinkle Cut, depending on which way you insert them. There is also a julienne insert which can be rotated from none, to fine to large without needing to change the blade out, which is really handy.
The thickness setting can be changed using a dial and can be set to any thickness you may want, even down to see through if you want to get really fancy.
The feet fold out and lock in place and are very sturdy.
Overall this is a great investment in the kitchen and will outlast many cheaper options. If you are looking for a strong, sturdy and very flexible mandoline, you can’t go wrong with this one.
